Open that Mouth
Hooray! We are getting somewhere now. Hint: while you are working on his face support his neck well in your hand. If you don't it will stretch and ooops! his head will pop right off. Yes, I've done it plenty of times. OK, let's make him grin. Take your blade, knife or what ever tool you use to cut and start at his nose. Gently, but smoothly, cut his mouth open from the nose to the back of the snout. Sometimes looking at him from the front view helps with the cut. That way you keep it even on both sides of the head. Once you are happy with cut take a finger or tool and smooth the edges of his "lips". If you are not happy with the mouth you can always close his mouth, reshape the snout and cut again.
